A Simple Salad on the Decking – The Taste of a Summer Evening

Tonight, I didn’t cook.

I didn’t even plan.

I just made a plate of what was in the fridge — fresh, colourful, easy — and took it outside to eat on the decking with the sun still high and the dogs snoozing beside me.

There’s something lovely about that. The simple act of throwing things together, sitting outside, pouring a cold drink, and just being.

Here’s what I had on my plate:

Crisp lettuce

Cherry tomatoes

Feta

Black olives

Grilled chicken

Creamy coleslaw

Sweet Peppers

Beetroot

A few extras: pomegranate seeds, boiled egg, a little dressing

And to go with it:🥂

A wee gin with ice☀️

Golden sunshine

🎶 Summer tunes on the speaker

🐾Two dogs, two cats somewhere in the grass📖

A book half-read beside me

Not to show off fancy food or complicated dishes — just to remember the ordinary, the kind of ordinary that makes you breathe a little easier.

There’s no set list.Just open the fridge, see what’s fresh, and make a plate that looks like summer to you.Eat it slowly.

Sit outside if you can. Add a drink. Play something soft.

Take a photo if you like — or don’t.

Just enjoy the moment.
